Heather Lolley is the Director of Operations of the Link Restaurant Group, overseeing the day-to-day operations of New Orleans’ award winning restaurants Herbsaint; Cochon; Cochon Butcher; Pêche Seafood Grill; Calcasieu, a private event facility; La Boulangerie, a neighborhood bakery and café; and the newly opened Gianna, where she is also a partner. Heather began her career with the Link Restaurant group from day one as a bartender at Herbsaint Restaurant. In 2006, Heather moved to Cochon as General Manager. She moved back to Herbsaint as General Manager is 2009 and was then promoted to General Manager of the Link Restaurant Group. In the spring of 2013 she managed all operational aspects of the opening of Pêche Seafood Grill, and in the spring of 2019 she did the same for Gianna. Heather was instrumental in the expansion of the charitable arm of the company, the Link Stryjewski Foundation (LSF), and is currently a member of the board. She is innately involved in the Foundation’s efforts supporting the LSF organizations including Kingsley House, Youth Empowerment Project, Grow Dat Youth Farm, Roots of Music, and Son of a Saint. She has also embraced other local organizations such as Hogs for the Cause, Edible Schoolyard, Chefs Collaborative Southern Foodways Alliance.

Under Heather’s tenure, Cochon was nominated for Best New Restaurant by the James Beard Foundation in 2007, and Peche won the award in 2014. Herbsaint was continuously named to the top 10 restaurants in New Orleans by The Times Picayune and recognized by the New York Times and other national renowned publications. In 2015, Heather was named a Top Female Achiever by New Orleans Magazine, and in 2017, she was recognized for her dedication to Hogs for the Cause and was inducted into the “Hog of Fame.” Also in 2017, she was a CityBusiness Women of the Year honoree. Gianna was honored to be named a James Beard Award Nominee for Best New Restaurant 2019.
